FERMENTED TEA LEAF RISOTTO

Ingredients:

  • 1 Cup Arborio Rice

  • 2 Asparagus Stalks

  • 2 Tbsp Burma Love Foods Tea Aioli

  • 1 Tbsp Burma Love Foods Fermented Tea Leaf Dressing

  • 4-6 Cups Chicken Stock

  • Cooking Oil

  • Shallots (Onion and Scallions work too)

  • Mushroom

  • Garlic

  • Salt & Pepper

  • Wine or Lemon for more flavor

  • 1 Tsp Toasted Sesame Seeds

  • 2-3 Medium Carrots, peeled and shredded

  • 1/4 Tsp Coarsely Ground Black Pepper

Directions:

  1. Cut the asparagus, bacon, shallots, and garlic (diced).

  2. Cook the aromatics (shallots, garlic, scallions, or onions) until the are translucent and fragrant.

  3. Add the mushrooms, asparagus, 1 tbsp of Tea Aioli, and cook for a few minutes until the veggies are tender.

  4. Add the Fermented Tea Leaf Dressing and mix well.

  5. Now add the rice and toss it, being careful not to burn the rice.

  6. Add a splash of wine or some lemon juice.

  7. Add enough rice to cover the risotto and stir constantly until the stock is absorbed.

  8. Stop adding stock once your rice is al dente.

  9. Add the rest of the Tea Aioli, salt, pepper to taste and garnish with cilantro.
